Olives turns from green to black on the tree as they ripen. We pick early in the harvest season to get a good quantity of green olives in the mix for two reasons. It's the green olives that give the oil a robust flavour and peppery kick which we love. The Italians describe this style of olive oil piccante which translates as 'spicy'. Having a majority of green olives also guarantees the highest polyphenol count, and it's the polyphenols that are rich in antioxidants.

It has a positive effect on the health of our heart, brain, metabolism and gut, as well as having brilliant anti-inflammatory properties. We make authentic, single estate, organic standard, hand produced extra virgin olive oil.
It’s cold pressed on the same day we pick the olives and brims with a rainbow of complex flavours.
We’ve been managing our land using organic principles since we bought the Olive Farm over 20 years ago. Our first harvest in 2009 was really hard work as we were on a steep learning curve but we were pleased as punch with the liquid gold that rewarded all our exertions.
Our harvests
Each year we harvest the olives in the autumn sunshine, picking all day and taking the olives to be cold pressed into oil that same evening. This captures the freshest taste and guarantees the highest possible polyphenol levels and lowest acidity for the best quality extra virgin olive oil.
We repeat the process until we’ve harvested all our trees, keeping the olive oil from each pressing separate. That way every pressing is a limited edition of olive oil and the flavour of every batch is unique. Our groves have many different cultivars of olive tree but the predominant varieties are Cellina di Nardo and Ogliarolo which are typical of Puglia.
The amount of olive oil we get from each pressing varies but we once came up with a calculation that it takes about 500 olives to make 500ml of oil. The year’s weather has the most influence on the yield we get but we’re always thrilled with what Mother Nature provides.
